The Journey of Roasting

The Art and Science of Roasting

The roasting process involves several critical stages:
1. Loading: Green coffee beans are loaded into the roasting machine.
2. Drying Phase: Moisture is removed from the beans.
3. Yellowing Phase: The beans turn yellow and release a grassy aroma.
4. Browning Phase: Complex flavors develop through the Maillard reaction.
5. First Crack: The beans expand and release steam and CO2.
6. Development Phase: The roast profile is fine-tuned to achieve the desired flavors.
7. Second Crack (if applicable): Darker roasts may undergo a second crack, leading to smoky flavors.
